Chorizo and Halloumi Pancakes With Fried Eggs



These savory pancakes are loaded with the flavors of chorizo and halloumi, topped with a perfectly fried egg. It's a delicious and hearty breakfast option that will satisfy your taste buds.

Ingredients:

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 1 large egg
  • 2 chorizo sausages, thinly sliced
  • 150g halloumi cheese, sliced
  • 2 large eggs
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish optional

Instructions:

Whisk the flour, baking powder, and salt together in a bowl

Beat the egg in a different bowl, then add the milk

Combine well

Add the wet ingredients to the dry ones and mix them together until both are well mixed

Add a little olive oil to a nonstick skillet and heat it over medium-high heat

To make a pancake, put a spoonful of pancake batter on the pan

Once the top starts to bubble, flip it over and cook the other side until it's golden brown

Do this four times to get four pancakes

Put them away

Put the chorizo slices in the same pan and cook them until they are crispy

Take them out of the pan and set them aside

If you need to, add more olive oil to the same skillet and then fry the halloumi slices until both sides are golden brown

Take it out and set it aside

Fry two large eggs in the same pan until they are done the way you like them

Put a pancake on a plate, then add chorizo and fried halloumi

Finally, put a fried egg on top of the chorizo and halloumi

Add salt and pepper to taste, and if you want, you can top it off with fresh parsley
