Ingredients:

  • 1 lb boneless chicken thighs, diced
  • 4 cups chicken broth
  • 1 cup shiitake mushrooms, sliced
  • 1 cup bok choy, chopped
  • 1/2 cup carrots, julienned
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Green onions for garnish

Instructions:

Combine chicken thighs, chicken broth, shiitake mushrooms, bok choy, carrots, garlic, and ginger in the pressure cooker

Add soy sauce, sesame oil, salt, and pepper

Stir well to combine

Secure the lid on the pressure cooker and set it to high pressure for 8 minutes

Once the cooking time is complete, allow the pressure to release naturally for 5 minutes, then do a quick release

Carefully open the lid and stir the broth

Serve hot, garnished with green onions
