A grain-free, low-carb one-skillet meal that mimics the flavors of chili mac without the carbs. This Keto Easy Chili Faux Mac is hearty, flavorful, and incredibly satisfying.
Ingredients:
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can diced tomatoes 14 oz
- 2 tbsp tomato paste
- 2 tsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- Salt and pepper to taste
- 1 cup beef broth
- 1/2 cup heavy cream
- 2 cups cauliflower florets, riced
- 1 cup shredded cheddar cheese
- Chopped fresh cilantro, for garnish optional
Instructions:
In a large skillet, brown the ground beef over medium heat
Add onion, garlic, and bell pepper
Cook until vegetables are tender
Stir in diced tomatoes, tomato paste, chili powder, cumin, paprika, salt, and pepper
Add beef broth and heavy cream
Bring to a simmer
Stir in riced cauliflower and cook until cauliflower is tender and mixture thickens, about 10 minutes
Sprinkle shredded cheddar cheese on top and cover until cheese is melted
Garnish with chopped cilantro if desired
Serve hot
